LUSCIOUS LUNCHES: Girona Salad

Just wanted to share a Luscious Lunch that I made today for Glyn and I from bits and pieces that I had in the house already. I was going to make a pizza but I didn’t have all the ingredients I needed and, as it was Easter Sunday, all the supermarkets were shut. So I decided to make a ‘sponny’ (spontaneous) salad based on a dish that Glyn and I once had in a cafe in the beautiful Spanish city of Girona, and it turned out to be super delicious…

Ingredients (Serves 2)

  • baby new potatoes (10-12)
  • walnut pieces (handful)
  • 2 x ripe pears
  • blue cheese
  • cooked turkey breast (I had half a packet in the fridge that I had bought on the reduced counter which needed eating up but you can leave this out and keep the dish veggie if you prefer)
  • mixed salad leaves from a bag
  • honey & mustard dressing

How to Make

  • Cut the baby potatoes in half and boil until cooked. Drain and leave to dry.

  •  While the potatoes are cooking, pan-toast a handful of walnut pieces in a dry frying pan

  • Cut up 2 small or 1 large ripe pear in to small pieces (don’t forget to put the pear core out for the blackbirds as they love them!)

  • Saute the cooked potatoes until golden in a frying pan with approx 1 tbsp of butter
  • Throw some mixed leaf salad in to a large bowl
  • Add the potatoes, toasted walnuts, and turkey and dress the salad with a honey & mustard dressing or any dressing of your choice
  • Add the pears and crumbled blue cheese to the salad and mix it all together

Serve and eat by itself or with some crusty bread and butter. Gorgeous!
