Campervan Recipes: Banana & Peaches Pan-fry (also great for Christmas)…

There are two fruits that go to an extra dimension of deliciousness when you pan-fry them: peaches and bananas. They not only go super-soft and luscious, they also stop being shy about how sweet they are and blatantly show-off in that department. Now, add in a favourite Christmas spice and you have a perfect winter dessert for when you are fed-up with Christmas pudding… 

This recipe is so simple that it’s ideal for the campervan but, like so many camping recipes, it is also great for your weekday meals and we sometimes even have it for breakfast. It is a lighter and healthier recipe than a lot of the heavy puddings that you get this time of year and so makes a nice change. However, once you have tried it I think you’ll want it all year round.

Banana & Peaches Pan-fry

Ingredients (Serves 2)

3  ripe peaches (chopped in to 1″ pieces)

2  ripe bananas (chopped in to 1″ chunks)

a large knob of butter

2 heaped teaspoons of cinnamon

1 heaped tablespoon of soft brown sugar (use coconut palm sugar for a healthier version)

How to Cook

  1.  Melt the butter in a large frying pan
  2.  Add the peaches and banana pieces and fry for around 5 minutes until they are soft
  3.  Add the cinnamon and stir to coat the fruit and mix with the juices
  4.  Add the sugar and stir until it has dissolved

I serve it with a quenelle of Mascarpone cheese (don’t you just love the word ‘quenelle’ – sometimes it is fun to just say it for absolutely no reason at all!). Or serve with some double cream or Greek yogurt or maybe some Yogam (1/3rd cream mixed with 2/3rds yoghurt).
