Quest for a New Campervan : Which Van is Best?

So which van have we decided on in the end? Well, this was all becoming a bit of a Grand Design and to get to that decision (which to date is still not set in stone) we have had to follow a long research road that has had lots of twists and turns. Everybody you speak to seems to throw another consideration in to the mix which sometimes seems to confuse the question more. It really is like buying a new house and secretly I am loving every minute…

Health benefits of parsnip

Who would have thought that parsnips were such superstars! When I am doing mashed potato in our van (and at home) I sometimes like to add a parsnip, sweet potato or carrot which gives the mash a great colour and also adds to the taste and nutrition.

Quest for a New Campervan: What Sort of Camper are You?

As much as we love Trev-the-Prev (our converted Toyota Previa) Glyn and I feel that it is now time for our next campervan.  As we won’t have the full funds until later this year, I have decided to launch myself on a full-on ‘Van Quest’, diving deep in to research on what our next van should be and the sort of questions everyone should ask themselves when they go on their own quest for a new campervan. It’s proving to be quite a journey and I’ll be sharing it with you over the next few weeks…

Soulful Travel and Cooking Tips from Amazing Maderia

I’ve been a bit quiet on here lately because Glyn and I decided to escape the soggy UK and find a bit of sun on the sumptious island of Maderia. We hadn’t been there before but have totally fallen in love with it. So here are 7 humble foods that don’t shout look-at-me but help us stay well and healthy in a quiet way…

Gluten-Free Chickpea Chapati

Chapatis are just great for campervan life as they are really quick and easy. Sometimes I measure out the dry ingredients in to small freezer bags and then take these in the van so you only have to add the wet stuff (water and oil) when you want to make them up. You can use normal or gluten-free plain flour instead but the chickpea flour does give you some added protein. Glyn quite likes them cooked a little longer so they become crisp like the edge of a thin pizza crust and you can crumble them over your meal to add texture, but I prefer them soft and they are nice as a substitute for bread sometimes. Thank you, Lindsay!

Campervan Recipes: Banana & Peaches Pan-fry (also great for Christmas)…

There are two fruits that go to an extra dimension of deliciousness when you pan-fry them: peaches and bananas. They not only go super-soft and luscious, they also stop being shy about how sweet they are and blatantly show-off in that department. Now, add in a favourite Christmas spice and you have a perfect winter dessert for when you are fed-up with Christmas pudding…  Continue reading “Campervan Recipes: Banana & Peaches Pan-fry (also great for Christmas)…”
