This is an almost magical way of cooking a whole chicken breast in a pan so that you have moist, juicy cooked chicken that you can either eat as it is or shred it up for millions of other easy recipes.
You can use it in: wraps, toasted sandwiches, risottos, quesadillas, salads, chicken mayonnaise, pasta, side dishes and probably many other ways that we haven’t discovered yet. So how do you do it? Well, here goes…
- Ingredients (serves 2)• 2 chicken breasts
• 1 tbsp. of light oil
- How to Cook
Put the oil in a frying over a low heat and move it around to coat the bottom
Place the two chicken breasts in the pan and cover with a lid or foil (see below for tip on the best lid to have)
Let the chicken cook on a low heat for 10 minutes undisturbed (time it with your phone as the time is important)
Turn off the heat and let the chicken sit with the lid on for another 10 minutes
Take off the lid and your chicken is ready
You can use this method to cook fish as well and I recommend 7-7 minutes for a steaky piece of fish or 5-5 minutes for a thin, flat piece of fish. However always check that your meat or fish is cooked through before serving.
Make-Life-Easier Tip
If you haven’t already discovered silicone lids then I really recommend that you get one, not only for the campervan, but for your kitchen at home as well. I have to confess that I am slightly obsessed with them and I can’t imagine kitchen-life without them now. They are just flat lids made out of silicone so they are really light and easy to store and they are pretty indestructible. You can buy them individually in different sizes or buy a set that has all the sizes in it for your range of pans. Most sets are under £20 and you can find them on Amazon or eBay. They are also good for covering a dish in the fridge as they form a light seal to the bowl so help to keep the food fresher for longer.
